Pinterest Recipe- Twinkie Cupcakes


I have little loves who LOVE twinkies! I try to pick some up for them, but with 4 kids in the house (3 of them being big eaters) I have to buy at least 3 boxes at a time... Can we say $$$$!!

 The other day while checking out Pinterest I ran across a recipe for Twinkie cupcakes. So of course it had to try it! I'm always trying to save some money , and in my mind I was seeing a way to give the kids one of their favorite snacks and save some money... WIN! 

The recipe is pretty straight forward and I had everything I needed already :) it comes with a buttercream frosting option. I didn't do the frosting because I have one who doesn't  like frosting and the others don't really care. I ended up having extra filling and used the leftover as the "frosting".

So with little helpers (both my little boys wanted to help) all suited up (I forgot to get a picture of them in their aprons, or them eating the cupcakes for that matter- I know Mom-of-the-Year Award right???) it was time to start making a mess.. Oops...I mean mixing :)

This recipe made 12 cupcakes. While they were cooking we mixed up the filling and set it in the fridge.
The hardest part for us was waiting for the cupcakes to cool so we could add the filling. 
NEWS FLASH!!! No one in my house has any patience!!! (They come by it honest!!)

Here are our muffins waiting to go in the oven. The boys did a wonderful job!!


And here is our finished Twinkie cupcake. To add the filling I used a icing tip and bag (my piping bag of choice is a ziplock bag). I poked the tip into the cupcake and squeezed the filling into the cupcake.
I used the leftover filling as our "icing" (I hate to waste anything!). The end result was 2 very happy little boys- who LOVED them, 1 big boy who HATED them, and a big girl who couldn't give me a thumbs up or down... She could really go either way. But hey 1/2 of them were happy - so we are calling it a win!! I didn't have one , because 12 cupcakes go fast around here!!!

DIY Cleaning Wipes... Well that sounds like a fabulous idea!

It's Monday, and it's raining! Just one of those blah days that I have no interest in dragging kids out in the rain to buy Lysol wipes.
I know, I know... How in the world did I let myself run out of them? 
But I've got this... 
So I got a few supplies and made my own. 
I used some Mr.Clean and a roll of paper towels. Really it's that easy! 
I put the paper towels into a Tupperware container ( this is just a cheap one from the dollar store)
Then I poured in about 1/2 a bottle of Mr. Clean and a little water ( I wanted them really wet).
After adding the cleaner I pulled out the cardboard tube. This part has to be a little easier! It came out but in several pieces. 
I'm happy with the end result! They work great and just a fraction of the cost of the real things.
